Tropical Fruit Medley With Anise Recipe

Ingredients

2/3 cup unsweetened apple juice
2 teaspoon cornstarch
1/2 teaspoon anise seeds, crushed
1 cup cantaloupe balls
1 cup seedless red grapes
1 cup peeled coarsely chopped ripe fresh; papaya
1 cup peeled coarsely chopped ripe fresh; mango
1 teaspoon brown sugar
1 fresh mint sprigs, (optional)



Cooking Directions:

Combine first 3 ingredients in a small saucepan; stir with a wire whisk until blended.

Bring to a boil over medium-high heat, and cook 1 minute, stirring constantly. Remove from heat, and let cool.

Combine cantaloupe and next 4 ingredients in a shallow bowl, and add apple juice mixture, tossing gently. Cover and chill for 1 hour. Yield: 4 servings (serving size: 1 cup).

Serving Ideas : Garnish with fresh mint sprigs, if desired.
