Tinoco's Fruit Gazpacho Recipe
Category: Beverages / Mexican
Rating: N/A
Servings: 4

Ingredients

1/3 cup lime juice
2/3 cup orange juice
2 cup pineapple; diced small
2 cup jicama; diced small
2 cup mango; diced small
1 tabasco sauce
1 chili powder
1/4 cup cheese; cojita or feta

Cooking Directions:

Mix lime and orange juices... Be sure all fruits are cut in 1/4 to 1/2 inch cubes. In each of 4 glasses (use 12-14 oz. size), layer 1/4 cup each - pineapple, jicama, mango. In a bowl combine the remaining pineapple, jicama and mango. Spoon mixture into glasses. POUR LIME ORANGE MIXTURE EQUALLY INTO EACH GLASS. Top with hot sauce and chili powder to taste and sprinkle with 1 T of cheese.

NOTES : From the City of Morelia, in Michoacan,Mexico, a street vendor serves this drink rapido and saludable y sabroso. Tinoco has worked a busy intersection for 24 years and the City is famous for these fruit drinks. Common substitutions are watermelon, papaya and cantaloupe for the fruits or peeled and seeded cucumber for the jicama. You might try adding some of the hot sauce to the juices for a mas chile drink. If you can, find the white questo anejo (also called anejado or cotija) cheese. Recipe by: Efrain Tinoco - Sunset Mag Nov. 1997 p.56
