Ingredients

4 granny smith apples
2 chipotle or jalapeno chilies
3 lemons; juiced
2 lemons; zest of
1 cup water
1 cup sugar
1 leek; white part only
1 tablespoon fresh mint; finely chopped

Cut apples into quarter-inch cubes and finely chop chipotle chiles. In bowl, mix apples, chilies, lemon juice, lemon zest, water and sugar. Marinate for 1 hour. Strain liquid and set aside apple mixture. In a small saucepan, simmer strained liquid for 20 minutes over medium high heat. Slice leeks and add to saucepan and simmer for another 10 minutes. Add apple mixture and simmer 20 minutes until a syrup forms and apples are tender. Remove from heat, add fresh mint and allow to cool. Serves 8. 190 calories per serving. 2% fat.
