Ingredients
1 tablespoon salad oil
1 medium onion; chopped
1 medium green pepper; chopped, optional
1 lb extra-lean ground beef
1 cup enriched regular long-grain rice
1 can kidney beans; (16 oz.)
1 can tomatoes; (16 oz.)
1 teaspoon salt
Cooking Directions:
In large skillet over medium heat, in hot oil, cook onion and pepper, 5 minutes or until tender.
Add ground beef and cook until browned, stirring occasionally.
Stir in remaining ingredients; heat to boiling.
Reduce heat to low; cover and simmer 25 minutes or until rice is tender, stirring occasionally.
