| Sharon's Mexican Fiesta Dinner Recipe |

Ingredients
2 tablespoon oil
1 large onion; chopped
1 large green pepper; chopped
3 cloves garlic; minced
1 poblano chili; chopped (or serrano or ja
1 teaspoon cumin seed
1 teaspoon hot chili powder
1 teaspoon crushed red pepper (optional)
1/2 cup cilantro; chopped
2 cup tomatoes, canned; chopped
2 cup black beans, canned; drained
2 cup pinto beans, canned; drained
2 cup corn, canned; drained
1/2 cup black olives; drained and sliced
1/2 cup water
Cooking Directions:
In a large skillet, saute onions and green pepper in oil until soft. Add the garlic, chili, and cumin seed. Saute until garlic is softened. Add the rest of the ingredients and bring to a boil. Reduce heat, cover and simmer for 2 hours over low heat adding more water if necessary. Serve over rice. Recipe By : Sharon Raghavachary soups/,stews
