Ingredients

1 cup onions -- minced
1/2 cup hot sausage -- sliced
1/2 cup mushrooms -- sliced
1/4 cup olive oil
1 cup rice
1 teaspoon salt
1 tablespoon chili powder
3 1/2 cup tomato juice
Cooking Directions:
In skillet saute onions, sausage and mushrooms in oil for 2-3 minutes. Add remaining ingredients; bring to a boil. Reduce heat; cover. Simmer for 18-25 minutes or until rice is tender.
