Salmon Patties With Cucumber Sauce Recipe

Ingredients

1 can (14 oz) salmon; flaked, drained & deboned
2 slice bread; crumbled
1 egg substitute; liquid
1/4 cup skim milk
1 teaspoon lemon juice
1/4 teaspoon salt
----SAUCE----
1/2 cup nonfat yogurt
1/2 cup cucumber; finely chopped
1 green onion; sliced
1/8 teaspoon dill weed



Cooking Directions:

Drain, flake and remove bones from salmon. Mix with bread, egg, milk, lemon juice and salt. Divide into fourths. Shape each into a patty; place in 8 inch square microwavable baking dish. Cover with paper towel.

Microwave on 70% power 6-7 minutes or until center is set, rotating dish once. Combine yogurt, cucumber, onion and dill. Mix well. Spoon onto each patty.
