Ingredients

4 oz unripe fruit (such as green mangoes; or gooseberries)
6 dried red chilies
1 small piece of trassi*
3 cloves garlic
1 onion
1 tablespoon fish stock
1 tablespoon brown sugar
1 lime juice



Cooking Directions:

The following spice mixtures are just samples of how to make each mixture. There are many many varieties of each mixture and the below recipes can be modified to fit individual tastes. Nam Priks are a relish like mixuture of spices and can be store for a week or so in a tightly sealed jar in the refrigerator.

Chop unripe fruit. Remove seeds from chilies and chop. Wrap trassi in foil and grill until it darkens. Pound with wother ingredients adding enough lime juice to dilute.
