Mtedza Soup (Peanut Soup) Recipe
Category: Soups
Rating: N/A
Servings: 4

Ingredients

1 cup peanuts -- roasted &
1 chopped
1 cup milk
1 onion, chopped
1 teaspoon oil
1 teaspoon flour
1 cup vegetable stock
1 salt and pepper

Cooking Directions:

Peanuts are a major source of protein in many African countries and the major source of oil in East Africa. Peanut flour is used as a thickening agent when preparing soups and vegetables.

Mix the peanuts with milk and onion in a pot. Simmer gently until soft and creamy. Using a potato masher or sieve, puree the mixture and remove from the pot. Add oil to the pot, add flour and mix to create a roux. Slowly add the stock, stirring well, and bring to a boil. Add the peanut mixture and simmer 5 minutes before serving.
