| Mr Food's Black-Eyed Peas Recipe |

Ingredients
2 tablespoon butter
1 small onion; chopped
1 can condensed chicken broth; (10 1/2 oz.)
1/2 cup water
1 pkg (16 oz) black-eyed peas; thawed
1 large tomato; in large chunks
1/2 teaspoon salt
Cooking Directions:
In a large saucepan, melt butter over Medium-High heat. Add onion and saute 3-4 minutes or until tender. Add broth, water, peas, tomato and salt. Bring to a boil. Reduce heat to Medium-Low and cook 45-50 minutes, or until tomato has cooked down to form a sauce, stirring occasionally. Serves 4-6. MC formatting by bobbi744@sojourn.com
