Ingredients
3 1/2 lb shoulder of lamb; cut in 1 1/2 cubes
1/2 cup flour seasoned with salt and pepper
1/3 cup olive oil
1/2 cup finely diced leeks
1/2 cup finely diced carrots
1/2 cup finely diced celery
1/2 cup finely diced fresh fennel
2 cup chopped plum tomatoes
1 bouquet garni, tied in cheescloth; consisitng of:
1 head garlic cloves; peeled
2 teaspoon dried fennel
1 bay leaf
1/4 cup pernod
3 cup beef broth
1 white beans; cooked separately
1 braised fennel; cooked separately
1/2 cup chopped fresh basil
