| Maple Walnut Tapioca Recipe |

Ingredients
1/4 cup tapioca
2/3 cup maple syrup
1/2 teaspoon salt
1 pint milk
1 egg yolk
1 egg white; stiff
1 walnut halves
1/2 cup chopped walnuts
1 whipped cream
Cooking Directions:
Mix tapioca, maple syrup, salt and well mixed egg yolk. Let stand for 5 minutes. Scald milk. Add milk to tapioca mixture and cook for 15 minutes, stirring frequently. Beat egg white until foamy. Cool, add 1/2 cup chopped walnuts. Fold in stiffly beaten egg white. Decorate with whipped cream and walnuts. Serves 6. Posted to recipelu-digest by "Diane Geary" on Feb 22, 1998
