2 tablespoon olive oil
2 cup cooked potatoes; 1/2 dice
1/4 cup onions; diced small
2 tablespoon shallots; minced
1 cup andouille sausage (8oz); chopped
1 tablespoon garlic; minced

3 tablespoon green onions; sliced
1 sauce picante (see recipe)
