Barbecued Black Beans Over Elbows (Mf) Recipe

Ingredients

3 cup elbow macaroni
32 oz black beans; drained and rinsed
4 oz chopped green chilies
14 oz chopped tomatoes (14-16oz); with juice
10 oz frozen corn kernels; thawed
2 tablespoon barbecue sauce
3/4 teaspoon ground cumin
1 salt and pepper
1 chopped fresh cilantro; for garnish
1 minced fresh jalapeno pepper; for garnish



Cooking Directions:

Bring water to a boil and cook pasta. Meanwhile simmer beans in a saucepan with the remaining ingredients. When pasta is done spoon in bowls, ladle beans over top and garnish with cilantro and hot pepper.
