Ingredients

3 medium ripe tomatoes; peeled and chopped
2 medium cucumbers; peeled, coarsl.chopd
1/2 cup water
1/4 cup wine vinegar
1/2 onion; chopped (opt.)
3 tablespoon olive oil
1 clove garlic; minced
1 salt; to taste
3 slice white bread; cubed
1 finely diced vegetables
1 parsley; for garnish
1 hard-boiled eggs, chopped; for garnish



Cooking Directions:

Combine tomatoes, cucumbers, green pepper, water, vinegar, onion, olive oil, garlic and salt in batches in blender. Blend on Medium until smooth. Increase speed to High. Add bread, a little at a time thought hole in top. Stir down. Chill thoroughly. Garnish as desired. Can serve with parsley and egg garnish. We like to eat this with croutons. NOTES : This recipe tastes like Gazpacho that we ate in Spain. Thickened with bread.
