Category: Appetizers
Rating: N/A
Servings: 1

Ingredients

1 cup yellow cornmeal
1/2 cup all-purpose flour
1 1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 egg, beaten
1/4 cup onion, finely chopped

Cooking Directions:

Heat about 3 inches Crisco Shortning or Crisco oil tp about 365 degrees in a deep iron skillet or deep fat fryer.

Combine cormeal, flour, baking soda, and salt in large bowl.. Stir in buttermilk, egg & onion. Drop by the tea or table spoonfull, a few at a time into the shortning or oil. Fry 2 minutes or until dark golden brown. Turn as need to brown evenly. Remove with a slotted spoon & drain on paper towels. You can also substitute cornmeal mix for the cornmeal, baking soda, & salt. Makes about enough for 8 Bubbas

There are about as many ways to make hushpuppies as there are people who eat 'em so I'm sure other Bubba's will disagree with me here. Recipe by: Lee Daniels
