2 eggs; well beaten
1 teaspoon vanilla extract
2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup flaked coconut
1 1/2 cup quick-cooking or regular oats; uncooked
1 cup chopped pecans
2 cup chopped dates (or raisins)
1 tablespoon grated lemon rind
1 teaspoon grated orange rind
