Ingredients

1 lb turkey breast; ground
10 oz frozen spinach; chopped, drained
1 tablespoon dried onions
1/8 teaspoon garlic powder
15 1/2 oz spaghetti sauce; healthy choice
1/4 cup seasoned bread crumbs; divided
1 cup cottage cheese; fat-free
1/4 cup egg beaters® 99% egg substitute
1/8 teaspoon pepper
3 oz mozzarella cheese; part skim milk, shredded
2 tablespoon parmesan cheese; fat-free, grated



Cooking Directions:

Microwave spinach covered 4-6 min. on high. Drain, pressing to remove excess mosture. Chop and set aside.

Combine ground turkey, onion, and garlic powder. Cook until no longer pink. Drain. Stir in spagetti sauce. Cover, microwave on high 2-4 min. until bubbly. Stir in 2 tablespoons of bread crumbs. Set aside.

In medium bowl, combine spinach, remaining 2 tablespoons bread crumbs, cottage cheese, egg and pepper.

Spread half of meat mixture in bottom of 9-inch square microwave safe dish. Top with spinach mixture, sprinkle with mozzarella cheese. Top with remaining meat mixture. Sprinkle with parmesan cheese.

Microwave on high for 3 min. Microwave on 50% power for 8-12 min. more until hot. Let stand for 5 min.

NOTES : Amount of mozz. cheese can be reduced without hurting recipe. Freezes well. Have tried other spaghetti sauce but some of them tend to be a little runnier...add more bread crumbs to compensate. Recipe by: Quick and Easy Microwaving Ground Beef
