Ingredients

1 red bell pepper, sliced
1 green bell pepper, sliced
1 can italian peeled toamtoes, drained an; d cut up (28 oz)
1 lb italian sausage, cut in 2 chunks
2 garlic cloves, minced
1 chicken, 3 pound, cut up
1 tablespoon olive oil
1 salt
1 pepper
1/2 teaspoon black pepper



Cooking Directions:

Put pepper, tomatoes, and sausage chunks in a baking pan and sprinkle with garlic. Arrange chicken on top. Brush chicken with olive oil. Sprinkle with salt and pepper. Bake, uncovered, 1 hour and 15 minutes, until tender, basting frequently.

Makes 6-8 servings.
