Ingredients
----BERRYSOAKING DIRECTIONS----
----FOR MEDIUM LOAF----
1/2 cup wheat berries
1 1/2 cup water
2 tablespoon honey
----FOR LARGE LOAF----
2/3 cup wheat berries
2 cup water
3 tablespoon honey
----MEDIUM LOAF INGREDIENTS----
1 soaked wheat berries above
2/3 cup water
2 teaspoon vegetable oil
3 tablespoon honey
3/4 teaspoon salt
2 1/4 tablespoon wheat germ
1 cup whole wheat flour
1 1/2 cup bread flour
3 tablespoon nonfat dry milk powder
1 1/2 teaspoon yeast
----LARGE LOAF INGREDIENTS----
1 wheat berries as above
1 cup water
1 tablespoon vegetable oil
1/4 cup honey
1 teaspoon salt
3 tablespoon wheat germ
1 1/3 cup whole wheat flour
2 cup bread flour
1/4 cup nonfat dry milk powder
2 1/2 teaspoon yeast
Cooking Directions:
Directions for soaking wheat berries: Combine ingredients in a saucepan and boil for approximately 1 hour, stirring occasionally (add water if necessary). Remove from heat, cover and let stand 6 to 12 hours (all day or overnight). Drain any standing water before adding the berries to the dough.
Dough: Using the size recipe appropriate for your breadmaker, follow the directions of your own machine. With my machine which is a Welbilt, I add all the liquids first and then the dry ingredients, of course, with everything at room temperature before starting.
