Ingredients

2 carrots, peeled and sliced diagonal; ly
1 celery stalk, sliced diagonally
2 cup cauliflower, cut into small chunks
1/2 red pepper, quartered and sliced
1 green onion, sliced
1 clove garlic, sliced
1 cup white vinegar
1/2 cup dry white wine
1/4 cup water
1/4 cup apple juice
2 teaspoon salt (omit for low-sodium diets)
8 peppercorns
1 teaspoon dried dill weed



Cooking Directions:

Mix all the ingredients and refrigerate in a closed jar for two days.
