Ingredients

1 pkg uncle ben's long grain & wild rice; blend (36 oz)
3 quart water
1/4 cup margarine or butter
1 1/2 cup cooking oil
1 cup lemon juice
3 cup tomatoes, fresh, diced
1 1/2 cup green pepper, diced
1 1/2 cup cucumber, pared and diced
1 cup parsley, fresh, finely chopped



Cooking Directions:

1. Cook rice in water with margarine or butter according to package instructions, for 20 minutes. 2. Transfer rice and remaining liquid to shallow pan, cover and chill. 3. Fold in remaining ingredients. Chill before serving.
