| Fettuccine Gorgonzola Recipe |

Ingredients
4 large shallots -- chopped
1/4 cup butter or margarine
1/2 cup cherry tomato wedges
1/2 cup prosicutto or ham strips
1 egg
3/4 cup crumbled gorgonzola cheese
1 or parmesan
2 tablespoon light cream or milk
1 salt and pepper -- to taste
8 oz pkg
1 noodles -- cooked/drained
2 tablespoon chopped parsley
1 fettuccine or med egg
Cooking Directions:
In saucepan, cook shallots in butter until tender. Add tomato wedges and prosicutto. In a separate bowl, mix egg, cheese, cream or milk, salt, and pepper. Toss to blend and cook for just a minute. In hot serving dish, combine fettuccine and cheese mixture. Toss to blend. Serve immediately, garnished with parsley. I have substituted zucchini for the ham with good results and also added zucchini to the original.
