Bacon And Cheddar Pancakes Recipe

Ingredients

1 cup flour
1 cup cornmeal
1/3 cup sugar
1 teaspoon salt
1 teaspoon baking soda
3 large eggs
2 cup buttermilk
1/2 cup plain yogurt
1/4 cup unsalted butter; melted
2 cup mild cheddar cheese; grated
1 lb cooked bacon; crumbled



Cooking Directions:

1. In large bowl, whisk together flour, cornmeal, sugar, salt and baking soda.

2. In another bowl, whisk together eggs, milk, yogurt and butter. Whisk into flour mixture just until combined.

3. Heat griddle over med heat (350F). Preheat oven to 200F if you want to hold pancakes.

4. Pour 1/4 cup of batter, forming 4" rounds and sprinkle 1 tbsp of cheese and bacon onto each pancake. Cook until golden, 1-2 mins on each side. Serve with cheese and syrup.
