| Double Almond Butter Cookies Recipe |

Ingredients
2 cup softened butter
2 1/2 cup powdered sugar; sifted, divided
4 cup flour
2 1/4 teaspoon vanilla; divided
2/3 cup almond paste
1/4 cup firmly packed light brown sugar
1 =ab c chopped almonds; toasted
Cooking Directions:
Beat butter with 1 cup powdered sugar Gradually beat in flour. Bet in 2 tsp vanilla. Cover and chill dough 30 minutes. Combine almond paste, brown sugar almonds and remaining 1/4 tsp vanilla. Shape dough around =AB ts almond paste mixture, completely enclosing almond paste center and forming 1-inch balls. Place on ungreased baking pans. Bake in preheated 350 F oven 15 minutes. Cool. Roll cookies in remaining 1-1/2 c powdered sugar or sift powdered sugar over cookies.
