Ingredients

1 large onion; chopped
1/4 cup butter
3 medium sweet potatoes; peeled, chopped
3 medium zucchini; chopped
1 bunch broccoli; chopped
2 quart chicken stock or
2 quart vegetable broth
2 medium red potatoes; shredded
3 cloves garlic; minced
1 can creamed corn or 3/4 cup fresh corn; kernels
1 teaspoon celery seed
1 teaspoon ground cumin
2 teaspoon salt
1 teaspoon pepper
2 cup light cream



Cooking Directions:

Place all ingredients in a 4 to 5 quart crockpot except cream. Cook on the low setting 6 to 8 hours or until sweet potatoes are tender. Ten minutes before serving, add the cream, if using. Heat through and serve. Formatted by Lynn Thomas. Recipe from Tracy Handler. I made this on 10-8-96 and it was good with or without the cream. Instead of the spices, I substituted 1 tsp. beaumond.Lynn
