Ingredients
1 pkg (20-oz) frozen corn kernels
1 green bell pepper; diced
1 red bell pepper; diced
1 cup vinaigrette dressing (see recipe)
1/4 cup chopped parsley
1 salt & pepper to taste
Cooking Directions:
SERVES 6
This is a lovely way to serve a cold corn dish, in summer or winter. Frozen corn works fine with this.
Melt the frozen corn in a large bowl of hot water from the tap. When melted, drain the corn very well. Mix all ingredients together and refrigerate for 1 hour before serving.
Serve as a cold side dish or salad.
