| Artichoke Chowder Recipe |

Ingredients
1 tablespoon olive oil
1/2 cup onions; chopped
1 cup mushrooms; sliced
8 oz artichokes; canned, *
2 cup chicken broth
1/2 cup green peas
4 tablespoon unbleached flour
2 cup evaporated skimmed milk
1 salt & pepper; to taste
Cooking Directions:
* Drain and chop the canned artichokes.
In a large saucepan heat the oil and saute the onions. Add the mushrooms, artichokes, and broth. Cook about 5 minutes or until tender. Add the peas. Blend the flour into the evaporated milk and add to the mixture in the pan. Cook for 5 to 7 minutes or until slightly thickened. Season to taste with salt and pepper.
