Ingredients
4 medium white potatoes
1 teaspoon salt
1 tablespoon dried mint
1/2 large purple onion; sliced
1/4 cup salad oil
1/4 cup fresh lemon juice
Cooking Directions:

Boil potatoes. Slice when cool. Add all the ingredients. Toss and chill.
