Ingredients

14 oz ground chicken
1/2 cup plus
1 tablespoon seasoned dried bread crumbs
1 egg; lightly beaten
2 teaspoon worcestershire sauce
3 drop hot pepper sauce; or to taste
4 1-oz diagonal slices sourdough brea; d, toasted
4 lettuce leaves
2 tablespoon plus
2 teaspoon sweet pickle relish



Cooking Directions:

submitted by: johanssen@matnet.com IN a medium bowl, combine chicken, bread crumbs, egg, and Worcestershire and hot pepper sauces lightly but thoroughly; shape mixture into 4 equal patties.

Spray large nonstick skillet with nonstick cooking spray; place over medium heat. Add chicken patties; cook, turning once, 10-12 minutes, until golden brown and cooked through.

To serve, top each slice of bread with 1 lettuce leaf; place 1 cooked chicken patty and 2 teaspoons of the pickle relish onto each leaf.

EACH SERVING PROVIDES: 1/4 vegetable; 3 proteins; 1 3/4 breads; 10 optional calories

PER SERVING: 331 calories; 24g protein; 12 g fat; 31g crbohydrate; 78mg calcium; 819mg sodium; 135mg cholesterol; 1g dietary fiber
