Ingredients

4 boned and skinned chicken breast ha; lves, cook & chopped
2 cup couscous; dry
2 3/4 cup fat-free chicken broth; boiling
1/2 cup golden raisins
1/2 cup slivered almonds; toasted
2 apples; peeled and chopped
1/2 teaspoon coriander
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves



Cooking Directions:

Preheat oven to 400F. Combine all ingredients in a 9x13x2 inch glass baking pan. Cover with foil and bake for 25 minutes.

The original recipe called for 2 1/2 c stock and 1/4 c unsalted butter. I have adapted it to reduce the fat.
