| Cassoulet-Mom's Recipe |

Ingredients
12 uncooked pearl barley
2 pkg frozen lima beans; thawed
3 fresh tomatoes; or 19oz can
1 large onion; chopped
2 cloves garlic; minced
1 salt and pepper; to taste
1 bay leaf
2 teaspoon sugar
5 tablespoon parsley
1/2 teaspoon basil
1/3 cup chicken broth
1 bottle vermouth; or white wine
Cooking Directions:
Put sausage in cod frypan. Pour wine half way up sausages. Cover and steam for 15 mins. Remove cover and saute until brown. Remove from frypan. Using a little of the sausage fat, saute the onions and garlic. Add tomatoes, bay leaf, pepper, basiland sugar. Simmer 3 mins. Add broth and 1/2 cup wine. Add beans , sausage and 3 tablespoons of parsley. Cover and cook 45 mins. Add salt and pepper to taste. Sprinkle with remaining parsley. Serves 6-8
