Ingredients
1 cup sugar
1/2 cup oil
1 1/2 cup grated carrots ***
1/4 cup nuts
1 teaspoon vanilla
1 1/2 cup flour
1 teaspoon cinnamon
1 teaspoon baking soda
2 eggs
1/2 teaspoon salt
Cooking Directions:
*** Substitute mashed bananas for a moist banana bread.
Preheat oven to 350. Mix sugar and oil. Add eggs and vanilla. Mix dry ingredients. Add to sugar mixture. Stir in carrots and nuts. Bake 1 hour.
