Caribbean Pork Chops With Apple Island Sauce Recipe

Ingredients

2/3 cup water
1/3 cup chopped onion
1/3 cup lemon juice
1 tablespoon vegetable oil
2 teaspoon light brown sugar
1 teaspoon chicken-flavor instant bouillon
3/4 teaspoon ground allspice
3/4 teaspoon black pepper
3/4 teaspoon cinnamon
3/4 teaspoon thyme leaves
1/4 teaspoon cayenne pepper; to 1/2 tsp.
4 boneless pork loin chops



Cooking Directions:

Combine all ingredients except meat. Place meat in shallow dish or plastic bag, Pour marinade over meat. Cover; marinate in refrigerator 4 hours or overnight. Remove meat from marinade; heat marinade. Grill or broil as desired, basting frequently with marinade. Serve with Apple Island Sauce. Refrigerate leftovers.

APPLE ISLAND SAUCE: In small saucepan, combine 1-1/2 cups chunky applesauce, 1/2 cup water, 2 tablespoons plus 2 teaspoons sugar and 2 teaspoons lemon juice. Bring to a boil; reduce heat and simmer 10 to 15 minutes. Makes 4 servings. Posted to MC-Recipe Digest by "townsend@nm.net" on Apr 29, 1998
