Ingredients

2 cup sugar
3/4 cup water
3 tablespoon butter or margarine
1/2 teaspoon grated orange rind
1/2 teaspoon grated lemon rind
3 sticks cinnamon
1/4 teaspoon nutmeg
6 medium louisiana yams; fresh or canned, cooked,
6 lemon slices
1 small apple; cored & sliced



Cooking Directions:

Combine sugar, water, butter or margarine, rinds, cinnamon and nutmeg. Heat to boiling point over medium heat; cook 5 minutes. Meanwhile, arrange yams, lemon slices and apple in a 1 1/2-quart casserole. Pour syrup mixture over other ingredients. Bake in moderate oven (350 degrees) for 30 minutes, basting occasionally with syrup.
