| Brandied Yams Recipe |

Ingredients
5 large sweet potato; abt. 4 1/4 lbs.
1/4 cup sugar
1/4 cup brandy; or more to taste
3 tablespoon butter or margarine; melted
1 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/8 teaspoon pepper
1 tablespoon butter or margarine; melted
1 tablespoon orange rind; grated
----GARNISH----
1 orange slices
Cooking Directions:
Oven 350ø
Cook sweet potatoes in boiling water to cover 45 minutes or until tender; cool to touch. Peel and mash. Stir in sugar and next 6 ingredients; spoon mixture into a lightly greased 11 x 7 x 1 1/2-inch baking dish. Brush top with 1 tbs. melted butter; sprinkle with orange rind. Bake at 350ø for 25 to 30 minutes.
Garnish if desired.
